Curry roux

For 4 servings of curry, you're going to need...


70gunsalted butter50gAP flour20ggaram masala

saucepan or sauté panwhiskoptional: small silicone ice cube tray

Melt butter over medium-low heat in saucepan.

When fully melted, add AP flour and whisk until homogenous.

Turn up heat to medium and whisk continuously until roux begins to brown. Aim for the color of a paper grocery bag.

When roux is browned, cut heat and whisk in garam masala.

Set aside to cool if using immediately, or pour into silicone ice cube tray and freeze if making ahead.
