Buttermilk Pancakes

You're going to need...

  • Ingredients
  • 480g milk
  • 480g buttermilk
  • 400g AP flour
  • 160g butter
  • 24g sugar
  • 8g baking soda
  • 8g baking powder
  • 2g salt
  • 2 large eggs
  • Time
  • About 30 minutes
  • Equipment
  • saucepan, at least 2 qt/l
  • griddle (stovetop or electric)
  • mixing bowl
  • rubber spatula
  • grill spatula
  • ladle or small measuring cup


  • In a saucepan:
  • + 480g milk
  • + 480g buttermilk
  • + 160g butter

Heat over low until the butter fully melts, then turn off heat.

  • In a large mixing bowl:
  • + 400g flour
  • + 24g sugar
  • + 8g baking soda
  • + 8g baking powder
  • + 2g salt

Mix to combine thoroughly and set aside.

Pre-heat a griddle over medium heat until water splashed on it immediately sizzles and evaporates.

  • Add to dry mixture:
  • + 2 large eggs
  • + wet mix from saucepan

Gently fold together with a rubber spatula. Don't worry about lumps, the goal is just to hydrate the dry ingredients.

Scoop some batter onto the griddle with a ladle or a small measuring cup. Flip when bubbles form and pop on the top side.

Check the bottom by sliding a grill spatula underneath and slightly tilting the pancake upward. Remove from the griddle when golden brown underneath.
